These delicious round treats might be more considered a donut? They do break our general idea that the batter should be liquid and applied to a pan. But look at these treats!

They're made with a fresh cow cheese; Iulia who submitted this says: you can substitute with cottage cheese, but drain the water. Don't use ricotta, no matter what other recipes might say!

Papanași Recipe

Ingredients (Makes 6-8 Papanași)

  • Farmer's cow cheese or Cottage cheese – 1 cup (well-drained)
  • Egg – 1 large
  • Sugar – 3 tablespoons
  • Vanilla extract – 1 teaspoon
  • Lemon zest – 1 teaspoon (optional, for extra flavor)
  • All-purpose flour – 1 cup (plus extra for dusting)
  • Baking powder – 1 teaspoon
  • Salt – A pinch
  • Vegetable oil – For frying

For Toppings:

  • Smântână Sour cream – ½ cup
  • Fruit jam (cherry, raspberry, or blueberry) – ½ cup
  • Powdered sugar – For dusting

Instructions

Step 1: Prepare the Batter

  1. In a mixing bowl, combine the cheese, egg, sugar, vanilla extract, and lemon zest. Mix well until smooth.
  2. In a separate bowl, whisk together the flour, baking powder, and salt.
  3. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms. If the dough is too sticky, add a little more flour.

Step 2: Shape the Papanași

  1. Lightly flour a work surface. Divide the dough into equal portions.
  2. Roll each portion into a ball, then use your thumb to create a hole in the center, forming a doughnut shape.
  3. Shape small dough balls separately—these will be placed on top of the finished Papanași.

Step 3: Fry the Papanași

  1. Heat vegetable oil in a deep pan over medium heat.
  2. Carefully add the doughnuts to the hot oil and fry for about 3-4 minutes per side, or until golden brown and cooked through.
  3. Fry the small dough balls separately.
  4. Remove the Papanași and drain on a paper towel-lined plate.

Step 4: Assemble and Serve

  1. Place a Papanași on a plate.
  2. Top with a generous spoonful of sour cream and fruit jam.
  3. Place a small fried dough ball on top for decoration.
  4. Dust with powdered sugar before serving.
