Poffertjes Recipe (Dutch Mini Pancakes)
Ingredients (Makes about 30 Poffertjes)
- All-purpose flour – 1 cup
- Buckwheat flour – ¼ cup (optional, for traditional flavor)
- Milk – 1 cup (warm)
- Egg – 1 large
- Dry yeast – 1 teaspoon
- Sugar – 1 tablespoon
- Salt – ¼ teaspoon
- Butter – For greasing the pan
- Powdered sugar – For serving
- Butter – For topping
Instructions
Step 1: Prepare the Batter
- In a small bowl, mix the warm milk, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour, buckwheat flour (if using), and salt.
- Add the yeast mixture and egg to the dry ingredients. Whisk until smooth and lump-free.
- Cover the batter with a clean towel and let it rest in a warm place for about 30 minutes to rise slightly.
Step 2: Heat the Poffertjes Pan
- Heat a poffertjes pan over medium heat and lightly grease each cavity with butter.
Step 3: Cook the Poffertjes
- Pour or spoon a small amount of batter into each cavity of the pan, filling them about ¾ full.
- Cook for about 1-2 minutes until bubbles form on the surface and the bottom is golden brown.
- Using a skewer or fork, flip each poffertje and cook the other side for 1-2 minutes until golden.
- Transfer the cooked poffertjes to a plate and keep warm. Repeat with the remaining batter, greasing the pan as needed.
Serving Suggestions
Poffertjes are traditionally served warm with:
- Powdered sugar generously sprinkled on top
- A pat of butter
- Optional: syrup or fresh fruit
