Just about every culinary culture has pancakes. You know that chain pancake place over by the highway? They claim to be 'International', but they only offer us French Toast and Belgian Waffles. What other international delights are they keeping from us?

It's a molded waffle, shaped like a fish.

Sometimes served on a stick, often filled with adzuki 'red bean' paste, chocolate, or other sweet fillings. To make these at home, you'll need a special fish-shaped pan.

Taiyaki Recipe (Japanese Fish-Shaped Pastry)

Ingredients (Makes about 6 Taiyaki)

For the Batter:

  • All-purpose flour – 1 cup
  • Baking powder – 1 teaspoon
  • Sugar – 2 tablespoons
  • Milk – ½ cup
  • Egg – 1 large
  • Water – ¼ cup

For the Filling:

  • Sweet red bean paste (anko) – ¾ cup
  • Optional: custard, Nutella, or sweetened cream cheese

For Cooking:

  • Vegetable oil – For greasing the pan

Instructions

Step 1: Prepare the Batter

  1. In a large mixing bowl, whisk together the flour, baking powder, and sugar.
  2. In a separate bowl, beat the egg and mix it with the milk and water.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until smooth and lump-free.

Step 2: Heat the Taiyaki Pan

  1. Preheat a taiyaki pan over medium heat and lightly grease both sides with vegetable oil.

Step 3: Assemble the Taiyaki

  1. Pour a thin layer of batter into one side of the pan, spreading it to cover the fish-shaped mold.
  2. Add about 1-2 tablespoons of red bean paste (or your desired filling) into the center of the batter.
  3. Pour a small amount of batter over the filling to cover it completely.
  4. Close the taiyaki pan and cook for about 2-3 minutes on one side, then flip and cook for another 2-3 minutes until golden brown.

Step 4: Serve

  1. Carefully remove the taiyaki from the pan and let it cool slightly on a wire rack.
  2. Repeat with the remaining batter and filling.
