- Baking powder – 2 teaspoons
- Salt – ½ teaspoon
- Coconut milk – 1 cup
- Eggs – 2 large
- Butter – 4 tablespoons (melted)
- Pandan extract – 1 teaspoon
- Vegetable oil or non-stick spray – For greasing the waffle iron
Instructions
Step 1: Prepare the Batter
- In a large mixing bowl, whisk together the all-purpose flour, rice flour, sugar, baking powder, and salt.
- In another bowl, whisk the coconut milk, eggs, melted butter, and pandan extract until well combined.
- Gradually pour the wet ingredients into the dry ingredients, whisking until the batter is smooth and lump-free.
Step 2: Preheat the Waffle Iron
- Preheat your waffle iron according to the manufacturer’s instructions and lightly grease it with vegetable oil or non-stick spray.
Step 3: Cook the Waffles
- Pour a ladleful of batter into the center of the waffle iron, spreading it evenly to cover the surface.
- Close the waffle iron and cook for 3-5 minutes, or until the waffle is golden brown and crisp.
- Carefully remove the waffle and transfer it to a cooling rack. Repeat with the remaining batter.
