  • Egg – 1 large

Instructions

Step 1: Prepare the Batter

  1. In a mixing bowl, combine the all-purpose flour, rice flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the coconut milk, pandan paste, and egg until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, whisking until smooth and lump-free.
  4. Let the batter rest for 20-30 minutes to allow the ingredients to meld.

Step 2: Cook the Kue Ape

  1. Heat a small non-stick skillet or special kue ape pan over medium heat. Lightly grease it with vegetable oil.
  2. Pour a ladleful of batter (about ¼ cup) into the center of the pan. Swirl the pan gently to create a thin edge with a slightly thicker center.
  3. Cover the pan with a lid and cook for 2-3 minutes, or until the edges are crispy and the center is set but still soft.
  4. Carefully remove the kue ape and transfer it to a plate. Repeat with the remaining batter, greasing the pan as needed.
