Instructions
Step 1: Prepare the Batter
- In a mixing bowl, combine the all-purpose flour, rice flour, sugar, baking powder, and salt.
- In another bowl, whisk together the coconut milk, pandan paste, and egg until well combined.
- Gradually add the wet ingredients to the dry ingredients, whisking until smooth and lump-free.
- Let the batter rest for 20-30 minutes to allow the ingredients to meld.
Step 2: Cook the Kue Ape
- Heat a small non-stick skillet or special kue ape pan over medium heat. Lightly grease it with vegetable oil.
- Pour a ladleful of batter (about ¼ cup) into the center of the pan. Swirl the pan gently to create a thin edge with a slightly thicker center.
- Cover the pan with a lid and cook for 2-3 minutes, or until the edges are crispy and the center is set but still soft.
- Carefully remove the kue ape and transfer it to a plate. Repeat with the remaining batter, greasing the pan as needed.
