Blini are thin, soft pancakes that are super popular in Russian and Eastern European cuisine. Made from a simple batter of flour, eggs, milk, and sometimes yeast, they’re kind of like crepes but with a bit more fluff. Traditionally, they’re cooked on a hot skillet until golden and can be served with just about anything—from sweet toppings like jam and honey to savory options like smoked salmon, caviar, or sour cream.

Blini are often made in big batches for special occasions, especially during Maslenitsa, a week-long festival that celebrates the end of winter. But they’re also enjoyed year-round as a versatile dish that can be part of breakfast, lunch, or dinner.

Blini Recipe (Traditional Russian Pancakes)

Ingredients (Makes about 12-15 Blini)

  • All-purpose flour – 1 cup
  • Buckwheat flour – ½ cup (optional, for authentic flavor)
  • Milk – 2 cups (warm)
  • Eggs – 2 large
  • Butter – 3 tablespoons (melted)
  • Sugar – 1 tablespoon
  • Salt – ¼ teaspoon
  • Active dry yeast – 1 teaspoon
  • Water – ¼ cup (warm, to activate yeast)
  • Vegetable oil or butter – For greasing the pan

Instructions

Step 1: Activate the Yeast

  1. In a small bowl, mix the warm water with the yeast and 1 teaspoon of sugar. Let it sit for 5-10 minutes until frothy.

Step 2: Prepare the Batter

  1. In a large bowl, combine the all-purpose flour, buckwheat flour (if using), and salt.
  2. In another bowl, whisk together the warm milk, eggs, melted butter, and the activated yeast mixture.
  3. Gradually add the wet ingredients to the dry ingredients, whisking until smooth and lump-free.
  4. Cover the bowl with a kitchen towel or plastic wrap and let the batter rest in a warm place for 1-2 hours to rise slightly.

Step 3: Cook the Blini

  1. Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with vegetable oil or butter.
  2. Pour a small ladleful of batter into the pan, swirling to spread it into a thin circle.
  3. Cook for about 1-2 minutes until bubbles form on the surface and the edges lift slightly. Flip and cook for another 30 seconds to 1 minute on the other side.
  4. Transfer the blini to a plate and repeat with the remaining batter, greasing the pan as needed.
